Traditional fermentation in stainless tanks, before aging in French and American oak barrels for 18 months. Medium-bodied with flavors of chocolate, licorice, cedar,  and black fruit. Firm and elegant with lush oak layers in balance. It goes well with lighter meat dishes, such as chicken and pork chops.

This Cabernet Sauvignon is an elegant, highly expressive wine that displays great complexity due to the multifaceted climatic conditions of the harvest season. The wine is dark in ruby with a purple to red edge. It displays bright aromas of black cherry, dark chocolate, black tea, allspice and ginger. In the mouth, it has a full-bodied attack, a round, balanced mid-palate redolent of cherry preserves, brown sugar and caramel and an extremely long finish of savory ripe fruit

The continued addition  of fruit from hillside vineyards and the blending of Merlot, Cabernet Franc and Petit Verdot with the Cabernet Sauvignon is responsible for the well integrated flavors, deep color and a full mouth feel. The vibrant blueberry qualities of the Petit Verdot marry well with the soft, alluring flavors of Merlot and contribute to the complexity of the masculine, tannic nature of the Cabernet Sauvignon. Very rich in texture with opulent flavors, a restrained framework of oak and a lingering finish of subtle earth, cigar tobacco and cedar.

A burst of black fruit aromas, the essence of perfect summer berries. Sweet, ripe blackberry flavors with an undertone of mocha and toasted oak. Balancing acidity and a fine, chalky texture carry the wine through to an exceptionally long finish, with no falling off of the rich fruit flavors. From first sip to last, nothing is missing as the wine crosses the palate. 

406    Cabernet Sauvignon STAG’S LEAP               2004   (Napa Valley)              105.00

86% Cabernet Sauvignon, 10% Merlot, 3% Cabernet franc, 1% Malbec. The wine was aged in 100 percent French oak barrels (50 percent new) for 24 months. Rich ruby red in color, luscious aromatics of black cherry, blackberries, and plum greet the nose with a slight back note of earth, leather, and bittersweet chocolate. Flavors of plum compote, spice, green tea, and cocoa are the introduction to this wine as velvety, unctuous tannins blend with a juicy, naturally balanced mid-palate of complex structure. Layers of spice, coffee and cream integrate with fruit notes to the end. 

407    Cabernet Sauvignon FREI BROTHERS                    (Russian River)             35.00

The grapes  are gently destemmed but not crushed, sending a significant number of whole berries to the fermentor forwarding dark fruit flavors in the finished wine. The wine is aged in American, French and European barrels, for an average of 14 months. 

408    Cabernet Sauvignon LOUIS MARTINI          2004   (Alexander Valley)        35.00

95% Cabernet Sauvignon, 2% Cabernet Franc, 3% Petit Verdot. The wine was oak aged for approximately 15 months in new and used French, American and European oak barrels with a mixture of medium and medium plus toasting levels for flavor and complexity.

76% Cabernet Sauvignon, 14% Merlot, 10% Shiraz. Cherries and coffee in the nose. Rich flavors of spicy cherries and balanced, round tannins make Glass Mountain flavorful and easy to drink. Enjoy it with hearty dishes like steak, beef stew and lasagna are excellent. Or sip it by itself.

Our style for Pinot Noir has always been one of moderate oak, high-tone fruit flavors and aromas of black cherry, with a rich nose, juicy palate and long finish. After fermentation the wine was aged for nine months in a combination of French, Oregon and Hungarian oak barrels.

Aromas of ripe cherry, cocoa, anise and rich baking spices. Plush flavors of cherry, plum and pomegranate meld with hints of delicate tea leaf. Structured, balanced acidity and elegant, firm tannins round out the mouth.

Ripe cherry, plum and violet aromas expand through the bouquet with shades of oak spice and earthy smoke filling the background. The silken texture of the wine is beautifully balanced by a firm framework, which conveys the complex flavors through a lengthy finish.

This Pinot Noir integrates flavors of dried cherry and a hint of strawberry jam. The wine begins with a sweet sensation and finishes with lingering notes of fruit. The subtleties in this wine will accentuate the earthiness of wild mushrooms, vegetables like eggplant and vegetarian dishes emphasized by hard or savory cheeses.

A plum and medium-bodied wine, this Zinfandel displays zesty aromas of Bing cherry, blackberry and anise with the spiciness of ground black pepper, cinnamon and vanilla. This Zinfandel is well structured with a long, lingering fruit finish. A nice contrast to salt, works well with roasted duck, turkey or pork medallions. It’s also great with grilled Italian sausage.

A dense, dark plum in color, the wine offers aromas of black cherry, raspberry, toasty oak, nutmeg, and cloves. Luscious flavors of blackberries, cherries, cocoa, cedar, and vanilla lead to a full, well-textured finish. It pairs beautifully with steaks and lamb chops.

The fruit from our Merlot comes from vineyards in Sonoma County’s Alexander and dry Creek valley. Extended maceration enhances color, flavor and mouthfeel, and aging for 18 months in oak barrel adds softness and a subtle vanillin component. The addiction of small amounts of Cabernet Sauvignon add structure and complexity, which enlivens the subtle texture and plum-like fruitiness that is the hallmark of fine Merlot.

Catch a whiff of cedar, smoke and ripe blackberries. Lots of mouthwatering plum and berries, married with toasty, spicy oak, yield a flavor that’s round and polished. Try it with grilled meats or pasta with red sauces.
